Farro, Butternut Squash Salad w/Chicken Apple Sausage
Ingredients:
- 1 cup dried farro
- 1/2 LB arugula
- 2 cups roasted butternut squash
- 2 chicken apple sausage links
Dressing:
- 6 T olive oil
- 3 T apple cider vinegar
- 1 T honey
- 1 garlic clove
- Salt & pepper
Instructions:
- Start by bringing water in a small saucepan to a soft boil and cook sausage for 6 minutes until opaque.
- While your sausage is cooking bring a cup of faro to a hard boil in salted water. Reduce heat to a simmer for 15 minutes then strain and set a side.
- Remove sausage from pan and brown with a little olive oil and set aside.
- Peel and dice butternut squash into 1/2 inch cubes and roast in the oven at 375 for 20 minuets with olive oil, salt and pepper until soft.
- Assemble your salad- toss faro, butternut squash, sliced sausage and arugula with dressing.
- Garnish with optional microgreens and pomegranate seed.
