Farro, Butternut Squash Salad w/Chicken Apple Sausage

Ingredients:

  • 1 cup dried farro
  • 1/2 LB arugula
  • 2 cups roasted butternut squash
  • 2 chicken apple sausage links

Dressing:

  • 6 T olive oil
  • 3 T apple cider vinegar
  • 1 T honey
  • 1 garlic clove
  • Salt & pepper

Instructions:

  1. Start by bringing water in a small saucepan to a soft boil and cook sausage for 6 minutes until opaque.
  2. While your sausage is cooking bring a cup of faro to a hard boil in salted water. Reduce heat to a simmer for 15 minutes then strain and set a side.
  3. Remove sausage from pan and brown with a little olive oil and set aside.
  4. Peel and dice butternut squash into 1/2 inch cubes and roast in the oven at 375 for 20 minuets with olive oil, salt and pepper until soft.
  5. Assemble your salad- toss faro, butternut squash, sliced sausage and arugula with dressing.
  6. Garnish with optional microgreens and pomegranate seed.
